changing interior color..

Has anyone done this? My interior is tan.. and I don't mind it but have been thinking I would like it to be gray or something instead. But how hard/time consuming would that be? Could I paint the dash and consoles ect with? or maybe plastidip it all somehow?

Also! does anyone know where to get the rubber flooring from? Ive seen it in expeditions, instead of carpet, its like a giant rubber mat. I have 3 kids.. my carpet is not pretty haha
