I have a pinging noise when accelerating around 1500-3000 RPM. The noise goes away if I gun it or let off the gas. I popped the hood and listened with a steele tube to my ear, and the pinging seems to be coming from the fuel pressure regulator. What gives?

No, the pressure regulator would not ping, it is a simple vacuum diaphram valve that allows feul to pass through once a certain fuel rail pressure it acheived and maintained.

However a lean condition can cause pinging, which can be caused by a blocked or broken regulator hahaha

Your pinging noise is most likely the passenger side exhaust manifold leaking on the 5.0L :)
It could be many other things but check that first, very common, will make more of a tapping noise though.
