You can get it off by removing the throttle cover, the air tube, and that's about it. It is easier to disconnect the upper radiator hose first, but not critical. It's also easier if the radiator and fan shroud are out, but that adds way more complexity than you need if just doing the t-stat.
Of course, if you're due for a t-stat, you're probably due for new hoses and serpentine belt, at least, that's my rule of thumb (replace it all at once, saves work later)...
That bottom screw is a bit daunting, probably just because it's so hard to see.
