This is probably a stupid question but is there any way to put the regular turn knob AC unit in my truck that has the electronic EATC unit?

You'll need to change the entire circuit and all of the supporting equipment to do it. There are some EATC swap threads, you can peek at them, you'll just be going in reverse... Not a simple plug 'n play.
