So my tires on my 2001 Mercury mountaineer AWD has P225-70R-16 and I have a friend who is selling a set of tires including spare that are P225-60R-16. Will those tires work on my car/rims???

Yes.

They will physically fit.

They will be a bit shorter.

The question you need to be asking is, are any of them worn where they could mess up your transfer case.

The AWD transfer case is extremely sensitive where tire size is concerned.

If all 4 tires are not the same size, not just the numbers but the actual physical measurements, your t-case is going to work incorrectly and you viscous coupling will be damaged and eventually fail.

Used tires are a big risk.
