hmmm, good question.. i was actually looking at the rear controls in my 97 yesterday, and even tho i really don't have anyone in the back seat, it'd still be cool if they were integrated w/ my new deck.
I assume you mean a new aftermarket head unit. I do not believe you can, unless there is a special harness. I know if you have a car with steering wheel controls you have to get a radio that can accept them, and buy a harness to do so. Maybe its something like that.
You can always take them out, install a GPS in there, and when the children in the back seat want to ask you "are we there yet?" on long trips, you can just point at the GPS...

I know there is an aftermarket harness that can be wired into your existing setup to work with aftermarket head units. I almost went down that road 4 years ago when I got my latest Explorer. Can also wire up your steering wheel controls (if equipped). For the life of me, I can't remember who made these kits, but I think Crutchfield "may" have carried them (but don't quote me on that).
