Heath, I sent you a PM about my move. Regarding offcamber, I cannot think of a single Moab trail with a rating of 3.5 or more that I have been on that doesn't have offcamber situations that will make a person with your "limited lean tolerance" $h!t his pants. Check out my "Herc Tour Report" thread and look at the third picture of me going up Hell's Gate. Do you want to do that? Also note the picture where I am leaning going through that squeeze on the Elephant Hill trail (BTW, it always feels MUCH more offcamber while inside the vehicle for real, than when looking at the picture afterwards). There are countless places in Moab with at least that much lean and sometimes much more.
During the Moab 200 run, Ray Lobato and I had to get strapped up one obstacle on the 3.5 rated Steelbender. The next Moab 2001, that same obstacle was much more eroded and severe. Both I and Jefe nearly rolled over trying to negotiate it. Jefe only made it when he started sliding his rear sideways by immediately pointing straight downhill and gunning it. If he hadn't done that perfectly exactly the way he did it, he would have rolled down the obstacle and over a cliff directly below the obstacle.
Moab will help you get more comfortable leaning, but on the other hand you'll be running trails with a 3 rating or less, so you'll be fine. There are more "3" trails available to run than you can possibly do in the limited time you'll be there so there's no reason to go somewhere that your vehicle is incapable of getting through and that makes you too uncomfortable to have a good time. Remember, the idea is to have fun.
