I am missing the Outside Temperature on the RIGHT cluster (next to N/S/W/E). Anyone know how to get it to show up?

2017 Explorer XLT Sport.

Welcome to the Forum.
The outside temperature should be displayed on the Sync 3 screen. Since mine has a different display I can't check to see if it should be in the right Information display or not. If it hasn't been there at all then you would probably need to use a tool like Forscan to enable it. There would be no settings that you could select to display it there otherwise.

Hmmm...I can certainly see it (at top of large center screen/main display) when just using the radio/BT/Sirius etc, but when in Apple CarPlay, it is not shown.

Check the forscan thread. You can enable it using that.
