Just been to put some air in my tyres, now the manual says 31 psi for 255/70/16 tyres, but the last people to put air in my tyres was the local Ford dealer and they are all at 40 PSI, and they are soft compared to how they were when I picked it up from them four weeks ago.

What is the correct tyre pressure ? 31 PSI seems soft to me

anywhere between 30-40 psi is fine... running 32 - 35 is the best for these trucks...

Tire Pressure Adjustment

There is no magic air pressure for all tires. Anyone who suggests one pressure(not knowing what tire you are talking about) is an idiot.

Tire pressures are based on the tire, and the vehicle, and the driver's preferences.

Look at the max pressure, listed on all tires. Example: 30psi is not enough air in a 44lbs. max tire. Vehicles which are heavier in the front should have more air pressure in the front than in the rear.

Ignore all door jamb psi recommendations. The factory doesn't know what tire you have on your vehicle now. That's what got all of those Explorer owners in trouble with Firestones. No heavy vehicle works well at high speed with low air pressure.

Start with a few pounds less air pressure than the max listed on the tire. Adjust them often to attain your ride quality preferences. More air pressure helps performance, safety, gas mileage, and less pressure gives a softer ride. Adjust them until you get even wear on all tires. Good luck,
