Ran codes p0113 ,replaced MAF, no luck. Will still shut off after 20-30 mins. Wants to start back but rough and it'll backfire if I hit the gas. Then won't start til sits overnight. Repeat. Anyone else been through this? I also unplugged IAC valve so that bogs it down a little but still at a loss.

When it shuts down check fuel pressure

Classic fuel pump going out
When cold it is find and can deliver just enough fuel to run, but after 20-30 min the pump is getting hot and failing to keep up with demand

Let it sit it cools back off and will run again

Fuel
Pressure test is your best friend

Welcome to the site. If you fuel level is low, it sounds like an old fuel pump starting to overheat. Check fuel pressure as @410Fortune said.

01 5.0 fuel rail pressure spec is 64 psi +/-

Had this exact situation with a faulty crank position sensor.

Bring a scanner capable of live data with you. When the truck fully dies, hook up the scanner and monitor the RPM on the scanner. It should read 150+ while cranking. If it reads 0rpm, that’s your issue.

The cel will stay on while cranking too if it does not see signal from crank sensor
