My oil pressure gauge has been going goofy on me for weeks. Today I put a manual gauge on it. 60lbs and 30 at idle. Not bad for 218K

While under the XLT, I turned the driveshaft, front one, it just turns and turns, I see the shaft going from the diff to the driver's wheel turning also

Wheels were on ramps. Is it not supposed to do that?

If you have auto locking front hubs, and they were unlocked, and the transfer case was in 2wd.then yes it should all turn without resistance.

why did the axle that went from the diff to the driver's wheel, turn maybe 1/8th then lock. Is that part of the differential process?

Normal operation.
You probably witnessed brake drag or some other bind on that side when it stopped turning.
