I had the oil changed at 5,000 miles. Now I'm at 7,500 miles, and a warning message light comes on whenever I start my car to "Change engine oil soon".

Why?

most likely was not reset to 100% oil lifer after your first change. My dealership missed doing that the first couple times. Every time I get an oil change, I verify that the oil indicator has been reset, and when it hasn't, i reset myself.

I bet they didnt reset the oil life monitor when they changed the oil.
Go by the miles rather than that, but reset it to get rid of the msg:)

Anyone know how to reset it?

Left side LCD screen:

Settings
Vehicle
Vehicle settings
Oil Life
Select 100% (or in your case maybe 75%)
Press "OK"

This is also why I use the "Trip B" to log my oil change interval miles.

you might want to let the explorer know you have changed the oil.

Doesn't anyone know how to read an Owner's Manual anymore?

I too have been using trip B for many years. One of the first things a taught my wife to do was use it and remember to reset it.

DDF,

I see a few people already got the answer to your question. :)
