My girlfriend's AC is acting weird in her 2017 Ford Explorer and I need help

Here's what it is doing. She'll be driving the car to the store and the AC will be working fine. She'll park, shut off the AC and turn off the car. She does her thing at the store. Gets in her car starts it turns on the AC and it's blowing hot. While driving home she turns off the AC because it's blowing hot and goes home. The next day she gets in her car to go to work. Starts her car, turns on the AC and it blows cold. Works like it should.
She discovered that if she leaves the AC on when shutting off the car, when she restarts it the next time the AC comes on when she starts car and works fine. It seems to have problems when she turns the AC off, then shuts car off, then starts car later and tries to use AC.
I have absolutely no idea what would cause this strange problem.

Why does she turn OFF the A/C if she is going to use it again? Try having her just shut OFF the vehicle with A/C left in the ON position and see if that makes a difference when starting up again.
It could be an issue with a blend door as mentioned above.
