after driving kinda hard for like 5 minutes my temp gauge will go up 3/4ths of the way and the radiator coolant tank in the right side under the hood will start to steam and bubble a little bit.
any suggestions?

When you are offroading, you are travelling at a lower speed, so less air is forced through the radiator. If your cooling system has any problems at all, they will be magnified. As mentioned above, change your t-stat and radiator cap, and make sure you use the proper mixture of anti-freeze and water. Also, make sure you have no obstructions in front of the radiator, and that the core is not filled with debris (mud, dirt, etc) as this will decrease it's capablility to cool.
