Do you think it will be a major issue if I didn't install the engine to transmission gasket? (thin steel plate)

You gotta ask yourself if it wasn't necessary then why God put it there?

Is there a reason you want to leave it off?

Did you stand back after a tranny replacement and see it there mocking you?

Spacing on the starter will be off slightly and the torque converter will be set in slightly more. I would be most concerned about the starter gear mesh.

Yes they are.

I haven't put the starter in yet, I might cut that bit out of the gasket sheet and just install that bit alone to line up the starter gear more precisely.

I will also crank the engine by hand to make sure the TC isn't rubbing in the bell housing.

God put it there as a glorified inspection hatch. That's all it is, an inspection hatch. Without it you can see the flexplate.
