Test your coolant temp sensor
My best guess ...
^^^^^^^^^^this! next thing would be somethin like the coils or wires, but donalss has the best suggestion thusfar

Next time roll it over for 3-4 seconds for 3 times. It’ll probably start on the 4th crank. I had to do this on my old Mounty. Happened directly after welding the frame.

Was the coolant temp sensor, but I had hard starting issues when it was mildly warm for a year or two before figuring out what the real issue was.

It uses the wrong fuel table because it thinks the temperature is really low or really high.

For example if it reads low it will run rich, and vice versa if too hot. what does the gauge read/can you see what the reading is?

It won’t be the dash gauge, you’d need to look on a scanner.

which years had just the one sensor? thought I heard of that a while back. one for the dash and engine. i know on mine ive got one for gauge one for the engine, but just wondering.

given that its reading 190 (and i assume it aint 190 where you are ;) ) i suspect the sensor for the engine

That’s definitely your issue.

Are you sure you replaced the right coolant temp sensor ?

There’s two entirely different sensors. You probably replaced the gauge one. Was it a one or two wire sensor?

@donalds do you know which is which off hand? It’s been 15 years or so.
