I recently had a flowmaster with a 2 1/4" tailpipe put on. After that, I had one catylictic converter taken out. The truck has a nice tone when you put your foot into it, but other than that it's just a low tone, with no vibrato whatsoever. Will taking out my second cat give me a more throaty sound that i'm looking for? And what will it do to the 02 senor/ motor in terms of running correctly?

Cleaned cats and 40 series for about 3 years now  . Not sure on what sound your going for...

This forum does not condone removing or gutting cat converters.
Keep your primary cat in place and deleteing 02 sensors is asking for problems.

I cleaned them with some soap and a scrubby brush.. If your rig is a daily driver and has to be driven on the street you should leave it alone..

I have a Flowmaster Catback with a 50 series, and 2.25 piping, it sounds pretty good, no vibration tho, dont need it really. I have thought of getting headers and hi-flow cats, thats on the debate pile. Right now I am getting ready to install a 3 inch intake system, should give 'er a little more tone.
I would leave those cats alone if you are trying to stay legal, the first time you go to get inspected you'll probably fail.

high flow cat really doesnt flow much more then factory IMOP, the factory cats actually flow quite well. I have not had good luck with aftermarket cats (catalyst comes loose too easy)
I did run a 2.75" inlet and outlet cat on my 2.5" 4.0L OHV exhaust, along with full intake, JBA's, custom Y pipe, 2.5" single muffler and pipe, it worked and sounded great.

Yes removing the second cat will give you a bit throatier sound. I wouldn't do an o2 delete. The sensors are in the y-pipe, before the cats. No need to get rid of them.
