I ended up having 2.5" downpipes and magnaflow catalytic converters installed.

No, I stopped by there on the way home. They weren't busy and offered up the work.

has anyone ever dynoed revising the cat pipes, is there any real power to be gained there besides looking at the bends and freaking out?

I don't think that anyone has, and most changes have been just cutting out the rear cats. I have a pair of aftermarket cats that I will use and remake the cat pipes. I'll wait until I have swapped engine and have a good tune, with timed testing. When I finally get that far I'll know what the cat pipes and rear cats are worth.
